One of my favorites. The thigh has plenty of fat to keep it all moist and of course the fat contains all the wonderful flavors. The bad thing about the thigh it is not the healthiest part of the chicken. We brine the thighs overnight then add our seasonings then in goes the fresh jalapeno strips and a good amount of cream cheese. It is all held together with not one but two strips of awesome bacon and smoked until done. A crowd pleaser. Served with 2 thighs. Suggested side is cole slaw.
